The house
At Le Petit Palais, everything starts in the cellar. Cuts of beef — Galician, Charolais, Beefgold — rest 30, 45, sometimes 60 days in our Dry Ager units. Time does its work: the meat loses water, gains aroma, develops the deep marbling that defines great houses.
Then comes the fire. We cook over wood embers — no gas, no industrial charcoal. The flame sears, the heat elevates. The final gesture happens in the dining room: the cut arrives whole, the knife carves before your eyes, salt falls like rain.
